INGREDIENTS:
- 2 tablespoons ghee or unsalted butter
- 1 lb chicken breast
- 2 carrots, cut into ¼“ rounds (122g)
- 2 celery stalks, cut into ¼“ slices (34g)
- 1 onion, diced (70g)
- 2 tablespoons parsley, minced
- 8 whole peppercorns
- 4 garlic cloves, minced
- 1 teaspoon salt
- 6 cups chicken broth (homemade or store-bought)
- 1 (7 oz) package Miracle Noodles (fettuccine style)
INSTRUCTIONS
- Heat ghee over medium heat in dutch oven. Saute carrots, celery, onions, and garlic for 3 minutes.
- While soup is simmering prepare Miracle Noodles according to package instructions. The drying step is unnecessary.
- Pull the chicken out, shred with two forks or a pair of meat claws, and place back in the dutch oven along with the Miracle Noodles.
- Garnish with parsley and serve.
