Elderberry Shrub is a fruit-infused, vinegar-based syrup that is typically mixed with soda water to create a refreshing beverage. It’s an old-fashioned favorite that’s making a comeback as a cocktail mixer. You can also use a shrub to enhance the flavor of salad dressings or to glaze roasted meats. The terms comes from sharbah, the Arabic word that means “drink” that has also given us “sherbet” and “syrup.”
Here is what to do:
2 cups dried elderberries
2 cups apple cider vinegar
2 cups sugar

Place the elderberries and vinegar in a saucepan. Gently heat just to the boiling pot, then remove the pan from the heat and let rest, covered, for 30 minutes. Strain, reserving the liquid. Return the infused liquid to the pan and add the sugar. While stirring, bring the mixture to a boil. Remove from heat and let cool slightly. Pour into a clean, glass jar with a tight-fitting lid. Store in the refrigerator and use with 4-6 weeks.
